Salad is a must have plate for all my meals whether breakfast, lunch or dinner. It doesn’t matter! I’ve learned by heart in my school years how fibers are really important for my health to aid digestion and prevent any bowel problems. And since I already have nervous colon, I don’t really have the luxury to have extra bowel problems than I already have. My friends always make jokes out of the fact that I always order salads whenever and wherever we’re eating out, I’m like their salads expert. I’ve never been to a restaurant that I haven’t tried their salad before even if it was the basic green or Greek salad!So yeah it kinda sounds like a teeny tiny obsession… but hey, it really fills you up, aids your digestion and provides you with numerous minerals and vitamins you already need.Furthermore, when I’m in the mood and the house is full with ingredients I kind of go with the flow a bit and create a dish out of my ‘just salad’ turning it into a dish that can fit into my lunch or even my brunch.
Magic Happens…
All the way from arugula, sweet corn, and avocados to tomatoes, onions, carrots and cucumber.
That’s why I never hesitated to share with you this easy recipe for you to bless your meals with a glimpse of healthiness.
All you’ll need is:
- 3 medium sized tomatoes (diced)
- 2 cucumbers (diced)
- 1 carrot (shredded)
- half an onion (diced)
- half a can of sweet corn
- 6 branches of arugula
- 1 diced avocado
- 1 cup of shredded lettuce
- 1/2 a cup of parsley
- For the dressing you’ll need:
- 1/2 a cup of lemon juice
- 1 TBSP of vinegar
- 1 TBSP salt
- 1 TBSP pepper
- 1 TBSP cumin
- 1 TBSP fresh ginger
- 1 TBSP crushed garlic cloves.
Mix everything together and pour in the dressing, then finally toss the fresh parsley on top!and voilà! Enjoy your fresh rainbow salad,and don’t forget to always munch healthily!
