Nectarine Galette

So last week my family did this crazy thing in which they went to the local grocery market to purchase veggies and fruits for the whole big family. Which resulted in our house receiving a lot and by a lot I mean like A LOT of fruits and veggies. One of these fruits were nectarines, which I absolutely love. They’re succulent and very rich in flavor however, they tend to become ripe very quickly and they often rot within days.

Therefore, I decided to save some of the ripe nectarines with a French recipe, which is the galette. I watched this recipe a long time ago that was like engraved in the back of my mind.

And believe it or not, it is a dessert which is sugar free, lactose free, eggless, oil-free, and has absolutely zero wheat! I did not even believe it when it came to light and I tasted this awesomeness!

All you need is:

  1. 2-3 ripe nectarines
  2. 1.5 cups of oat flour, if you have oat flour it’s fine however if you don’t you can easily use normal oats and grind them in the food processor which is absolutely cool cause I did it hahaha and actually it’s more trusted so you are sure it’s all oats.
  3. 2/3 cups of dates
  4. Water to almost cover the dates in the food processor.
  5. 2/3 cup of almond/peanut butter.
  6. Cinnamon

For the frosting:

  • 1 cup Greek yoghurt
  • 1.5 tbsp molasses.

Recipe:

  • Put your oat flour in a bowl and let it sit
  • Blend your dates in the food processor or blender with water to an amount that almost covers the dates, until it forms a paste.
  • Combine the oat flour with the date paste, then add your almond/ peanut butter and mix with your hands until it forms a dough ball, leave it in the fridge for 30 mins.
  • Cut your nectarine into slices.
  • On a baking sheet, spread your dough ball and add cinnamon to the base.
  • Add your sliced nectarines to the middle base and fold it with the outer part of the dough.
  • Put it in the oven for 30-40 mins @ 180 degrees.
