I have been absolutely going crazy for the past week, wanting to innovate with my recipes and sharing it with you. While running out of ideas, I’ve read an article about the health benefits of coconut as it is rich in manganese, iron and copper and thought about including this lovely ingredient to my recipes.
Therefore, I bought a huge batch of coconut flakes and started doing magic in the kitchen. I began blending it in the blender with water and making coconut milk which I’ll be posting its recipe very soon. I grinded the flakes in the grinder to make some coconut flour in order to be ready for my coconut bread!

This gluten-free bread is an amazing recipe for anyone suffering from Celiac disease which I believe I am not diagnosed with it yet, gluten really gives me stomachache to be honest. So I decided to eliminate my gluten intake by not eating any bread or pasta.
Honestly, I am okay with removing pasta from my diet but I do crave a sandwich from time to time. So I had to come up with a toast that is gluten free to enjoy my sandwiches without having any indigestion of course.

With no further ado, I’d like to share my recipe and the instructions.
Ingredients:
-5 eggs
-1/2 cup coconut oil or any veggie oil
-3/4 cup coconut flour
-2 tbsp cornstarch
-1/2 tsp sea salt
-1 tsp baking powder
-1 tbsp honey
Instructions:
– Mix the eggs, oil, honey together until fully combined
- Mix the coconut flour, cornstarch, baking powder and salt.
- Add your dry ingredients to your wet ingredient until combined.
- Place it in a loaf pan and pop it in the oven for 25-30 minutes at 180 degrees.
