Spiced Apple Jam

The past two weeks have been the toughest weeks I’ve had during quarantine, regardless of the fact that the country’s opening up bit by bit but I still feel quite unsafe.

I have lost my appetite, and this is an understatement. For those who know me, breakfast is the most important meal for me. I always go creative with it when I have time and it just lifts up my mood in the beginning of the day.

However, during the past two weeks all I have been doing is waking up to an absolutely no desire to eat. I drink my coffee and just do whatever I have to do then have dinner at 9 pm which is usually a grilled chicken salad or a tuna salad cause I don’t even have the mindset to go creative with my dish.

Then my mom surprised me the other day with a huge box of apples and told me that I had to do recipes with those apples cause we can’t possibly eat all these apples without them getting bad.

So I decided to make a big jar of healthy spiced apple jam which I never have ever thought would taste so heavenly!

So here’s what you need:

  • 3-4 apples peeled and shredded
  • 1 tsp of cinnamon powder
  • 1/2 cup of maple syrup
  • 1/4 cup of fresh lemon or orange juice
  • 1/2 tsp ginger
  • 1/2 cup of water

Steps:

  • Prepare a clean empty jar or jars according to their size in order to be full of apple jam
  • Shred apples so that they make 4 full cups
  • Place apple, spices, juice and water into a pot on medium heat until it comes to a boil
  • Cook from 25-30 minutes then reduce heat gradually so it thickens
  • Leave it to cool down for 10 minutes then add it to your jars
