Lactose free, Eggless, Sugar free, Banana bread.

I always thought that eggless or lactose free recipes will normally fail while creating them, yet I really wanted to renovate my usual healthy banana bread and create one that is suitable for people with Lactose intolerance and vegans as well cause it’s eggless.

Most importantly, it is also healthier for anyone who just wants to maintain a healthy lifestyle while eating something sweet for breakfast or just as a light snack.

Even though I’m not lactose intolerant I find almond and coconut milk lighter and healthier for me honestly. I even started adding almond milk to my coffee now!

Additionally, I also used whole wheat flour for this recipe which even though isn’t lower in calories than white or all-purpose flour, the fiber and vitamin contents are higher in whole wheat flour.

All you need for this recipe:

  • 2-3 ripe bananas
  • 1/2 cup honey
  • 1/4 cup almond milk
  • 1/2 cup vegetable oil
  • 1 1/2 cup of whole wheat flour
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp chopped raw almonds
  • 1 tbsp raisins

Instructions:

  • Mash your bananas and add honey, oil and almond milk, and mix very well.
  • Add your flour, cinnamon, baking powder and baking soda.
  • When it forms a dough add your chopped almonds and raisins.
  • Grease your loaf tray and place it in the oven at 180 C, for 30-40 minutes according to your oven.
I added some chopped banana slices on top of the dough before placing it in the oven.
